Large spiny silver leaves of this thistle-like perennial are topped with large attractive artichoke-like blooms. Height 5 feet; spread 4 feet.

The stems are edible and are a classic Victorian vegetable. Now, where's that copy of Mrs. Beeton's Cookery book when you need it? The genus Cynara is now in family Compositae.

For maximum freshness, please keep seed refrigerated in its original packaging until it is time to plant. Sow seed in containers in a cold frame in the spring. Grow on in fertile to moderately fertile soil in full sun, sheltered from strong winds. Provide protection in winter from temperatures below -5°C ( 25°F ).
